Here is Sally working hard in the Cheesemaking Factory …

Island Pure Sheep Dairy is a 260 hectare grazing property on the banks of the beautiful Cygnet River and Gum Creek on South Australia’s Kangaroo Island. Sally George originally went to the Island as a tour guide, but after completing cheesemaking courses at ACMAA and elsewhere she landed the job of head cheesemaker – and hasn’t looked back!

Island Pure dairy has been operating for 22 years, and acts as a farm, dairy, factory, tourist attraction, retail outlet and wholesale distributor all under the one roof. Their cheeses are inspired by European classics such as Haloumi, Feta, Manchego and Kefalotiri. They also produce luscious ewe’s milk yoghurt flavoured with the famous Kangaroo Island Ligurian Bee honey.
