APPLICATION
VEGI-PROX® 01 has been specially developed for fermentation of plant-based recipes. This culture will deliver good fermentation time and mild flavour. In some plant-based recipes, this culture can develop a smooth and creamy texture and mouthfeel.
AMOUNT TO USE
Manufacturing: 50 U* / 1000L of recipe.
METHOD OF USE
Use for direct vat inoculation:
– Culture when the bottom of the vat is just covered with the recipe.
– Vigorous agitation promotes dissolution.
STORAGE
Conservation in its original packaging: 24 months at –18°C
12 months at +4°C

Suitable for vegetarian and gluten-free diets.
